Ingredients: (1 cup = 250 ml)
Potatoes 2
Olive oil 2 tbsp
Black pepper powder ½ tsp
Chilli flakes 2 tsp
Oregano 1 tsp
Finely chopped coriander stems 1 tsp
Garlic powder ½ tsp
Corn flour 2 tbsp
Instructions:
1.Rinse the potatoes well and halve them.
2.Further halve each half again and transfer it to a bowl.
3.Add water and rinse again till you get clear water.
4.In a saucepan add around one liter water along with salt and boil.
5.When you can see rolling boil add potato wedges and boil for 4 minutes.
6.Turn off the flame when wedges are stiff yet partially cooked.
7.Drain the wedges immediately and wipe with any cloth or tissue paper to dry.
8.In a bowl add partially boiled potatoes and olive oil and mix well.
9.Further add salt, black pepper powder, chilli flakes, oregano, chopped coriander stem, garlic powder and corn flour one by one.
10.mix well and give a nice coating.
11. Do not add any water for this coating.
12.Place seasoned potato wedges in greased baking tray and bake at 180 degree C for 20 minutes.
13. After 20 minutes potato wedges will be ready to serve with ketchup or any dip’s of your choice.
Note:
1.If you would like to fry the potato wedges then skip olive oil and instead of that add water 1 tsp at a time and make a smooth thick paste. Coat the wedges well and deep fry.
2.You can add chilli powder instead of chilli flakes.
3.You can add minced garlic instead of garlic powder.
